In the great northwest of America, at the foot of the Rocky Mountains in Missoula Montana, there lies a jewel of culinary experience – Posh Chocolat. Ana and Jason Willenbrock, husband and wife team, are creating one of the world’s most celebrated and sought after delights. Together, these passionate chocolatiers, source the highest quality cacao beans, creating the most pure and highest quality chocolate. Combined with their eclectic ingredients and artisanal techniques, Jason and Ana create nothing less than works of art.
Their handcrafted artisanal truffles and pastries are of quality only paralleled to those created in France and abroad, but each with an individual flare. Posh Chocolat prides itself on using only the finest single origin chocolate from the South American region. Innovative truffle flavors and exotic combinations are founded through their passions and love of foods from all over the world. They have captured the essence of various spices, herbs, and glorious fragrant notes that excite the palate as well as sooth the senses.
Jason believes in the integrity of the truffle, “Chocolate is an amazing vessel to carry the finest seasonings and products that represent world cuisine”. According to Ana, “Chocolate makes everything in life better, period”.
About Ana & Jason
Ana was born in Brazil and Jason Willenbrock, a native of St. Louis in Missouri, both attended and met at The Culinary Institute of America in New York. The CIA is one of the most renowned schools for educating, encouraging and introducing the top leading chefs in the United States today. Both graduated from the CIA program in 2000. After graduation, Ana developed her passion and techniques for the creation of gorgeous sweets and delectable pastries in Spain at a renowned 3 – star Michelin restaurant. Jason trained in Provence, France under world famous chef Roger Vergé of a 3 star Michelin restaurant, Moulin de Mougin.
Jason began working at the Triple Creek Ranch – Relais & Chateau in Montana´s Bitterroot Valley as Saucier and Line Cook. Within two months Jason was promoted to Executive Chef. After a period of training in Europe, Ana joined Jason as the Pastry Chef at Triple Creek Ranch and soon thereafter the couple married.
Jason had always been curious of truffles and how they have gained notoriety among those who enjoy fine foods and chocolate. He made the decision to make chocolate his medium and made the commitment to bring to Missoula what it had been missing, fine artisanal chocolates and epicurean desserts. Jason knew he could not reach his goals without the creativity and support of his wife Ana, who specializes in the pastries and desserts served at their confectionary shop.
Posh Chocolat debuted to the public in February 2005 with an enthusiastic welcome from the local community. Posh Chocolat is where modern culinary artistry meets traditional handcraftsmanship and where taste experiences are rivaled only by sensual sensations.
